四美咖喱拌飯(Curried Rice with Assorted Vegetables)

原料

熟米飯: 一人份, 青豆: 40克, 生腰果: 15克, 紫甘藍: 兩片, 干香菇: 兩朵, 咖喱塊: 1塊, 鹽: 1/3小匙

步驟

1熟米飯打散待用,紫甘藍洗凈切丁,干香菇用溫水泡法後切丁,速凍青豆解凍,咖喱塊切成小丁待用;

2熱鍋下寬油,放入生腰果小火翻炒至金黃脆香後撈出,把油的一半倒出,一份留在鍋內,放入米飯翻炒片刻,然後加入紫甘藍和咖喱一起小火翻炒直到米飯粒粒分明,盛出米飯;

3另起一鍋,倒入剛才剩下的一半油,放入青豆和香菇丁中火同炒,快熟的時候加入鹽和腰果炒均勻,一起倒在飯上即可。
