5洗乾淨的排骨放入鍋中,加水(差不多與排骨平)

6加蓋煮至有泡沫出來開蓋

7一直煮到浮沫大量湧出關火

8排骨倒入漏鍋中,用溫水沖洗乾淨(一定要用溫水,冷水會使肉質變老)

9鍋也洗乾淨,排骨重新入鍋,加水(這次的水量稍微多些,我家喜歡喝湯水所以我放水稍多些。喜歡濃些的可以少加水)

10煮開後倒入適量料酒

11還有少許浮沫,用勺子撇除
