麵粉: 140g, 雞蛋: 1個(50g), 清水: 10g, 精鹽: 2g
步驟
1準備材料~

2麵粉倒入盆中,加入精鹽,一點點倒入蛋液水,揉成麵糰蓋保鮮膜醒面20分鐘以上(剛和好的麵糰有些硬不易揉成麵糰,醒面吸收水份就變軟了)~

3麵糰稍微按扁大概機器1檔的厚度,先用1檔壓,剛開始很粗糙,將裂紋一面朝下反覆重疊壓制~

4稍微平整以後,用2檔壓一遍,3,4檔各壓一遍,最後用5檔壓一遍薄厚就可以了(光滑平整),面片因為反覆壓制,若是粘連可稍微撒些麵粉,就不粘合了~

5長長的面片就壓好了,撒些麵粉分割成均勻的等份,切成長條片,在對半切成四方形~
