芹菜: 若干根, 烤鴨: 半隻, 餛飩皮: 60張, 雞蛋: 1個, 鹽: 若干克
步驟
1從菜場買了一隻烤鴨,留了半隻做餛飩;

2將芹菜去根、擇葉、洗凈;

3將芹菜切成3-5mm小段;

4將芹菜丁放入開水中焯至八分熟,看到顏色變深即可,芹菜變軟即可;(也可在生芹菜中加鹽腌制,讓芹菜出水)

5將焯完水的芹菜擠去水分,將烤鴨去骨切丁備用;

6將擠乾的芹菜、烤鴨丁、雞蛋倒在一起,加入適量的鹽,攪拌均勻,考慮到烤鴨本身已有鹹味,所以鹽比日常做餛飩少放一些;

7包餛飩;

8餛飩開水下鍋,煮沸後加入少量涼水再次煮沸,重複三次,餛飩就差不多熟了。芹菜的清香加上烤鴨的香氣,人間極品!
