排骨: 2斤左右, 生抽: 適量, 老抽: 適量, 干辣椒: 10多個
步驟
1將精選肋排洗凈,切成小塊

2為了方便,直接將干辣椒折斷放在洗凈的肋排上 (如果喜歡吃麻,也可同時放入花椒和麻椒)

3開火,鍋內放入油,油至7,8分熱,倒入肋排

5至肋排沒有血色,加入生抽,翻炒幾下

6加入適量老抽,翻炒至肋排均勻上色

7加入純凈水,至將要沒過肋排就行,然後大火燒開,會產生白色沫沫,要撇掉,燒開後轉小火,加入適量鹽,慢燉

8待湯汁快收盡的時候,加雞精,翻炒均勻 (如果鹽味不夠,也可加適量鹽)
