小技巧
- 戚风蛋糕注意事项:蛋清要打在无水无油的容器中;打发好的蛋清和蛋黄液混合物搅拌时要注意力度和方式,要从下往上挑;家庭制作加入醋,就避免添加塔塔粉这类化学物;蛋糕模拿出来要马上倒立过来,以免塌陷。
- 利用小工具要领:右手拿着锯齿板(这个小工具卖蛋糕模具中都有卖的, 2-3元一个, 也可以用硬点纸板自己制作)紧挨着蛋糕边缘,左手缓慢均匀的转动蛋糕台),这样就能出现规则的横纹, 而且还能去掉大部分的奶油, 让我们吃得更健康。
