1鸡改刀成小块,用开水焯一下

2将猪腿肉肥瘦分开,瘦肉剁碎,肥肉切成石榴粒

3一部分葱姜拍碎或打结,一部分切成沫.

4锅内下油,煸炒鸡块,依次下料酒,酱油,糖,葱姜,放水没过鸡块,烧开后改小火炖

5在剁好的肉沫里分次加入适量的水,然后放入鸡蛋,淀粉(尽量少),鸡精,盐,调和油,葱姜沫,依一个方向搅拌上劲

6手上沾水,将肉沫用两手不断摔打成如图大小的肉圆

7另取一锅,放入一斤左右的油,等油温上来后,调小火,将肉圆依次放入炸成金黄色

8将炸好的肉圆放入在正烧着鸡的另一口锅内同炖,约一个小时即可
