鲈鱼: 一只, 芒果: 两个, 小葱: , 姜末: , 泡椒: 5个, 红小米椒: 2个, 蛋清: , 盐: 半勺,浇汁, 白胡椒粉: , 水淀粉: , 香醋: 一勺,浇汁, 生抽: 一勺,浇汁, 辣椒油: 半勺,浇汁, 白糖: 半勺,浇汁, 香油: 几滴,浇汁
步骤
1鲈鱼一条,请鱼档带为杀好,洗净控干水分

2将鱼平放,先切下鱼头、鱼尾。再一手按住鱼身(用毛巾垫上更好,防滑),一手持刀紧贴鱼骨横向将鱼身的肉片下。(注:刀要够锋利哟~~各位童鞋先磨刀去!)

3以同样的方法将另一面的鱼肉也片下来,片好以后就是这个样子,两片是鱼肉,一片中间的是鱼骨头

4片去鱼肚子部分的鱼刺

5鲈鱼本身刺少,下图就是鱼刺被全部去除好的样子

6将片下的鱼肉鱼皮朝下,一手按住鱼肉,一手持刀从鱼尾巴那端开始,向鱼尾方向,片成斜薄片

7片好的鱼片

8鱼片切好以后,用油、蛋清、少许盐、白胡椒粉抓匀,腌制15分钟

9锅内水烧开后,将鱼头,鱼尾分别放入,汆烫2、3分钟,至熟

10火调小,水不要沸腾,似开未开时,把鱼片一片一片下入锅中

11待全部鱼片下入锅中后,倒数5秒

13取一个稍微大些的盘子,将汆烫熟的鱼头、鱼尾、鱼片摆好造型

14小葱、姜末各适量、泡椒5个、红小米椒2个

15锅内热油,烧至5成热时,将上述配料细细切好倒入锅子里

17调制【浇汁】:香醋一勺+生抽一勺+辣椒油半勺+白糖半勺+盐半勺+香油几滴

18倒入浇汁
