原料

茄子: 3个, 葱: 适量, 豆瓣酱: 适量, 蒜: 4瓣, 醋: 适量, 糖: 适量, 老抽: 适量, 生抽: 适量, 盐: 克, 辣椒: 1、2个, 肉糜: 100g, 生粉: 适量, 料酒: 适量

步骤

1茄子 洗净 切块 大蒜 去皮 切末 肉糜 加1汤匙生粉、0.5汤匙料酒 拌匀 (肉糜化冻来不及 直接用现成的肉圆了)

2葱 洗净 切段 辣椒根据耐辣程度 去籽 切末

3热锅 冷油 (油多一点) 加入茄子 小火 (茄子吸油) 而后 辣椒爆香 倒入肉糜 翻炒

4茄子 和 肉糜一起翻炒

51汤匙 老抽、2汤匙 生抽、1汤匙醋 加少量水 滚煮 茄子煮软

6加 适量盐糖 少量醋 调味 加葱花 起锅
