糯米粉 :320克, 水 180克+70克, 麥芽糖 90克, 白糖 70克+70克
步驟
1準備材料,也許320克的糯米粉會有些多也會有些少,具體的粉的吸水性可能不同,先用300克,再慢慢加比較好

2180克水加麥芽糖

3加熱至糖水沸騰

5拌均勻,成糊狀

6等涼至溫熱的時候加入剩下的1/3的糯米粉

7揉成光滑麵糰,剛開始有點粘手,越揉揉涼後,就不太粘了,如果再粘,再再加點糯米粉

8擀成8mm左右厚的面片,再切成8mm寬的長條

9把長條略搓圓,再切成5cm左右長的小段

10鍋中倒油,將部分小糯米段涼油下鍋

11小火炸至浮起來,這時候別去撥弄它們,它們還很軟很粘,一弄會粘到筷子上,也可能會變形

12再繼續炸至部分出現金黃色,可以關火,先把黃的撈出來濾油,油的餘溫會把剩下的也炸至金黃

13繼續這樣把剩下的炸完

14鍋中倒入70克的白糖,再倒入70克的水,小火熬煮至冒大泡

15倒入炸好的江米條,迅速翻均勻,讓它們都裹上糖漿。馬上關火,撒上剩下的70克白糖
