小技巧
這裡的肉皮是要處理過的,把干豬皮先用鹼水將上面的油污洗凈,晾乾表面的水分,用溫油炸至金黃色酥脆時即可貯存備用。再通過合理的烹調,即可以做成可口的類似魚肚的美味佳肴。將油炸好的肉皮,放入溫水中發透,洗凈,切成小條。食用時,以雞湯或肉湯,煨燉炸好的肉皮,或者做小炒非常美味!
