手指餅乾: 200克, 淡奶油: 125克, 咖啡酒: 100克, 馬斯卡彭芝士: 250克, 細砂糖: 70克, 蛋黃: 3個, 水: 65克, 吉利丁片: 10克
步驟
1提前稱好各原材料!以免做的時候手忙腳亂!圖中的藍色包裝為奶油奶酪,是我不小心放進去了,請忽略!

2用涼開水泡吉利丁片,不能用自來水哦!泡的同時請放冰箱!

3細砂糖和水倒在碗里,中火加熱至沸騰!

4加熱的加熱煮糖水的同時打發蛋黃,顏色稍變白,體積變大即可!

5讓糖水繼續沸騰兩分鐘!

6蛋黃打成如圖所示!

7將糖水慢慢倒入蛋黃,邊倒邊快速攪拌,以免糖水把蛋黃燙熟!這一步就是在給蛋黃消毒!

8全部倒入後中速攪拌!直到蛋黃液冷卻!

9冷卻後放在一旁備用!

10從冰箱拿出吉利丁片,將水倒掉,隔水加熱!

11隔水加熱,直到全部變成液體!

12趁熱倒入一旁待用的蛋黃液!

16將蛋黃液倒入芝士糊里!

29將剩餘的慕斯糊倒入模具!抹平整!

30用保鮮膜密封!放入冰箱冷藏!是冷藏不是冷凍哦!

31冷藏一夜後,從冰箱取出用熱毛巾捂一下模具四周,或者用吹風吹模具四周幫助脫模!
