豬裡脊肉: 250克, 泡子姜: 150克, 生抽: 10克, 白鬍椒: 5克, 雞精: 3克, 醋: 15克, 白糖: 30克, 香蔥: 1根, 蒜米: 5克, 紅翻天: 5克, 泰式甜辣醬: 15克, 料酒: 5克, 澱粉: 適量, 色拉油: 40克
步驟
1豬裡脊肉去筋切成絲,放少許生抽、白鬍椒、料酒、濕澱粉及少許白糖在碗內拌勻

2泡子姜切絲,用溫水沖洗幾次,祛除鹹味

3紅翻天、泰式甜辣醬放入碗中調勻。(因為不太能吃辣的,所以多用甜辣醬替代的)

4將白糖、雞精、生抽、醋倒入碗內,加少量水和澱粉兌成味汁待用

5炒鍋放入油,燒至五六成熱時將碼好味的肉絲放入滑至七分熟,盛出備用

6炒鍋放入油,(適當多放點)燒至五六成熱時將泡子姜滑入鍋內翻炒1分鐘,盛出備用。(這樣做是為了祛除姜的辛辣味)

7肉絲,泡子姜控出油備用

8洗凈炒鍋放入油,燒至五六成熱時放入調好的甜辣醬翻炒
