2五花肉洗凈切塊,入冷水鍋加薑片,花椒煮開後稍煮片刻

3焯好水的五花肉用溫水沖洗乾淨,瀝干水份

4鍋內倒少許油,薑片爆香,倒入五花肉翻炒,把肥肉裡面的油炒出來。(炒出來的油可以另外盛出來炒菜)

5炒過的肉轉入砂鍋,加料酒,生抽,老抽,陳皮,山楂,冰糖,沒過肉的水燒開,轉小火燉至肉軟爛。(蔬菜的量較多,多些湯汁,讓菜浸在湯里,味道會更好)
