2將雞蛋蛋清與蛋黃分開,其他材料稱好用量備用

3將雞蛋黃加入碗中,攪拌後分三次加入食用油,每次加入後攪拌均勻,攪拌完成後加入牛奶再攪拌,手動攪拌即可

4均勻後如圖,蛋黃油牛奶已經融合不分離

5將可可粉與低筋麵粉篩入以上調好的蛋液中,儘量將粉多篩幾遍

6順著一個方向攪拌至均勻後備用,手動攪拌即可

7準備空碗,加入蛋清,電動攪拌機攪拌

8蛋清攪拌至粗泡加入1/3糖粉,也可以用細砂糖,糖粉較細容易融化攪拌

9蛋清攪拌至出現細泡加入剩1/3糖粉後繼續攪拌,也就是糖粉分三次加入蛋清液中

10蛋清攪拌至出現細密不清晰紋路加入最後1/3糖粉後繼續攪拌

11再攪拌後出現細長彎勾,這時蛋清基本打發

12再打發後出現細直尖,這時蛋清已經比較挺,注意別打發太硬

13打到如圖的程度就不要再打了,打過了勁會影響口感

17將均勻的可可糊加入剩餘打好的蛋清中,依舊順著一個方向向內切

18注意不要畫圈攪拌

19攪拌均勻後入模,震模出氣泡

20上下110度30分鐘,後,再上100下110度烤30分鐘(也可以150度烤50分鐘,但開裂,不介意省事可以這麼烤)

21中間停那次用牙籤插到底,如圖就是下邊沒烤透,所以如上步我調了下下邊溫度

22烤好晾涼後如圖,我這個還是裂開了,還好裂縫不算太大

23晾涼後脫模,我用小抹刀鏟了一下周圍,把杯子放在下邊,取出後將模底拿下就好,放冰箱冷卻一小時備用(如圖戚風就是蛋清打發過了點,有點硬,所以注意蛋清打發別太硬!!也可能是後期下邊溫度調高了)

24蛋糕胚晾涼後開始準備打發奶油,淡奶油是藍風車,網評最容易掌握打發程度穩定性好味道純正
