料酒: 適量, 干辣椒: 5個, 花椒: 適量, 姜: 5片, 醬油: 適量, 鹽: 適量, 雞精: 適量, 大蒜: 15個, 蔥: 2根, 黃豆醬/豆瓣醬/干鍋醬: 適量, 香菜: 適量, 椒鹽: 適量
步驟
1先將雞洗乾淨剁成小塊用少許鹽腌一下,雞塊越小越入味哦~

2蔥,姜,蒜,干辣椒,花椒,八角準備好備用

3鍋中放入油加熱

4下雞肉翻炒

5雞肉炒至金黃色,可根據自己的口感調整煎炸的時間,我比較喜歡吃硬的所以炸的時間長^ _ ^

6雞肉炸好後剷出放置一邊,鍋中剩餘的油繼續加熱後倒入蔥,姜,蒜,干辣椒爆出香味後再加入2勺黃豆醬或者豆瓣醬爆出香味(我這次放的是2勺豆瓣醬和2勺干鍋底料)

7倒入雞肉加少許醬油翻炒

8再加少許糖,青椒及小尖椒翻炒

9待雞肉著色爆出香味後放入椒鹽及少量雞精調味

小技巧
1.腌制雞肉時只能放少許鹽,不然後面再加的調料會很咸 2.雞肉一定要炸至金黃色才好吃
