原料
豬裡脊肉片: 80克, 芝士片: 20克, 雞蛋: 1枚, 紫蘇葉: 1片, 麵粉: 50克, 高麗菜(捲心菜): 適量, 黑胡椒: 適量, 番茄醬: 適量, 鹽: 適量, 麵包糠: 適量
步驟
1將豬裡脊肉切成1公分左右的厚片;

2用小錘將肉片錘至扁平,敲散纖維;

3肉片鋪平,撒少許海鹽和黑胡椒碎稍稍腌制一下;

4接著撒少許麵粉,放上芝士片和紫蘇葉;對摺前在肉片邊緣再撒點麵粉,便於黏著,合上豬排;

5然後給豬排裹一層麵粉、一層蛋液、一層麵包糠;

6熱鍋起油,投入一片蔬菜測下油溫,等菜葉浮出油麵時,溫度就差不多了;

7放入豬排,輕輕推動,翻面,一直炸到兩面呈金黃色,並且在油鍋里的滋滋聲變小,就可以撈出瀝乾了;

8趁熱切開豬排,將高麗菜葉切絲後和豬排擺盤,可以淋少許番茄醬調味。
