Unsalted butter, softened: 1/2 cup, Brown Sugar: 1 cup, Eggs: 2, Vanilla Extract: 1 tbsp, Ripe bananas, mashed: 4, All-purpose flour: 2 cups, Baking Powder: 1 tbsp, Salt: 1/2 tsp, Nuts: At you wish
1Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2In a large bowl, cream together the butter and sugar until light and fluffy (mine turned out to be not so fluffy, but it's fine). Stir in the eggs one at a time, beating well with each addition. Stir in vanilla and banana.
3In a separate bowl, sift together flour, baking powder, and salt.
4Blend the banana mixture into the flour mixture; stir just to combine. Fold in nuts of your choice. Pour batter into prepared pan.
5Bake in preheated oven for 1 hour, until a toothpick inserted into center of loaf comes out clean.
No salt needed if the butter is already salted. Baking powder needs to be mixed well with flour.
