鱸魚: 一隻, 芒果: 兩個, 小蔥: , 薑末: , 泡椒: 5個, 紅小米椒: 2個, 蛋清: , 鹽: 半勺,澆汁, 白鬍椒粉: , 水澱粉: , 香醋: 一勺,澆汁, 生抽: 一勺,澆汁, 辣椒油: 半勺,澆汁, 白糖: 半勺,澆汁, 香油: 幾滴,澆汁
步驟
1鱸魚一條,請魚檔帶為殺好,洗凈控干水分

2將魚平放,先切下魚頭、魚尾。再一手按住魚身(用毛巾墊上更好,防滑),一手持刀緊貼魚骨橫向將魚身的肉片下。(註:刀要夠鋒利喲~~各位童鞋先磨刀去!)

3以同樣的方法將另一面的魚肉也片下來,片好以後就是這個樣子,兩片是魚肉,一片中間的是魚骨頭

4片去魚肚子部分的魚刺

6將片下的魚肉魚皮朝下,一手按住魚肉,一手持刀從魚尾巴那端開始,向魚尾方向,片成斜薄片

7片好的魚片

8魚片切好以後,用油、蛋清、少許鹽、白鬍椒粉抓勻,腌制15分鐘

9鍋內水燒開後,將魚頭,魚尾分別放入,汆燙2、3分鐘,至熟

10火調小,水不要沸騰,似開未開時,把魚片一片一片下入鍋中

11待全部魚片下入鍋中後,倒數5秒

13取一個稍微大些的盤子,將汆燙熟的魚頭、魚尾、魚片擺好造型

14小蔥、薑末各適量、泡椒5個、紅小米椒2個

15鍋內熱油,燒至5成熱時,將上述配料細細切好倒入鍋子裡

16小火煸炒,炒出香味

17調製【澆汁】:香醋一勺+生抽一勺+辣椒油半勺+白糖半勺+鹽半勺+香油幾滴

18倒入澆汁

19用澆汁碗接少許清水,涮一刷,也倒入鍋子裡
