雞蛋: 1個, 麵粉: 200克, 豬肉: 370克, 胡蘿蔔: 1根, 蔥: 一段, 芹菜: 50g, 鹽: 1.5克, 姜: 3片, 生抽: 1勺, 料酒: 1勺, 香油: 1勺, 水: 200+40克, 耗油: 1勺
步驟
1準備食材: 餡料:豬肉370g、蝦仁100g、芹菜50g、香菇50g、胡蘿蔔50g、玉米50、豌豆粒30g、耗油10g、生抽5g、料酒5g、鹽1.5g、糖1g、五香粉1g、水40g、香油3g、雞蛋1個; 皮子:麵粉200g、水100g;

2將水、慢慢倒入麵粉中,先用筷子攪拌均勻;

3揉面至三光狀態(手光、面光、盆光),蓋保鮮膜、醒1.5-2小時;

4將配菜洗凈切碎備用;

5將豬肉洗凈、切塊,去肉筋;

6將食材、調味品放入攪拌杯內;

7將攪拌杯放置在主機上,選擇手動程序,我用3檔攪打不到1分鐘,即為圖上所示。

8打好的肉餡;

9將肉餡取出,蝦仁切大段加入肉餡內攪拌均勻備用;

10將醒好的麵糰切半、搓長條,切劑子;

11取一個劑子,用手掌按一下,擀成圓片;

12取一個麵皮,放入適量肉餡;

13先對邊捏好;

14再將四邊捏合;

15再如圖示將每兩個孔相鄰的兩條邊捏合;

16捏好以後就有了一個基礎的四瓣花形;

17將香菇、玉米、胡蘿蔔、豌豆粒分別填入孔中;

18捏好的餃子生坯放入蒸鍋中,冷水上鍋,水開後大火蒸15分鐘即可;
