Semifreddo是意大利继Gelato之后的又一种新兴甜品,Semifreddo意思是半冷,部分冷冻,是冰淇淋又是蛋糕~ 1cup=236ml 模具的尺寸大概是11cm*22cm 配方来自Martha Stewart
原料
砂糖 1/2cup, 柠檬汁 1/3cup, 柠檬皮屑 1大匙, 蛋黄 4个, 黄油 70g, 蓝莓 3/4cup, 砂糖 2大匙, 淡奶油 2cup, ladyfinger(手指饼干) 若干
步骤
1先做柠檬酱(Lemon curd),将1/2cup砂糖、柠檬汁、柠檬皮屑、蛋黄和切小块的黄油放入奶锅中,小火边加热边搅拌,直至变浓稠,过筛至隔冰水的盆中冷却

2将两张保鲜膜铺在模具中,可以喷些油辅助固定,四周要留出适当的宽度

3将蓝莓和糖放入搅拌机

4搅拌至成均匀的果酱液,可以中间用刮刀辅助刮一下壁

5过筛

6淡奶油打至7分发

7加入柠檬酱,刮拌均匀

8模具中加入一半的奶油柠檬酱,用刮刀抹平

9用手指饼干表面蘸满蓝莓酱汁,铺在模子中,如果酱汁有剩余,也一起倒在模子中。

10将剩余的奶油柠檬酱加入,刮刀抹平

11将模具外的保鲜膜反过来盖上,冰箱冷冻8小时至冷冻
