戚风蛋糕也可做但失败率较高,主要在蛋清和蛋白分离再混合时容易出错,而这种海绵蛋糕全蛋的成功率就高,所以生日蛋糕都采用这种方法。八寸的,用130g面粉,120g糖粉,速发油30g.鸡蛋6个。六寸的用70g面粉,60g的糖,速发油15g,3个鸡蛋!
