chorizo sausage, cut in slices: 1, olive oil: 1 tbs, onion, chopped: 1/2, garlic, crushed: 2 garlic cloves, italian peeled whole tomatoes: 400g can, eggs: 4
1Mash sliced sausage with a fork.
2Heat oil in pan, and cook onion and garlic until soft.
3Add tomato and bring to boil.
4Reduce heat to low and stir in sausage.
5Cook until mixture reduces and thickens.
6Season with salt.
7Preheat oven to 180C.
8Divide tomato mixture among 2 ovenproof remekins or tapas dishes.
9Carefully crack 2 eggs over top.
10Bake until eggs are just set.
11Serve with bread.
