猪里脊肉: 250克, 泡子姜: 150克, 生抽: 10克, 白胡椒: 5克, 鸡精: 3克, 醋: 15克, 白糖: 30克, 香葱: 1根, 蒜米: 5克, 红翻天: 5克, 泰式甜辣酱: 15克, 料酒: 5克, 淀粉: 适量, 色拉油: 40克
步骤
1猪里脊肉去筋切成丝,放少许生抽、白胡椒、料酒、湿淀粉及少许白糖在碗内拌匀

2泡子姜切丝,用温水冲洗几次,祛除咸味

3红翻天、泰式甜辣酱放入碗中调匀。(因为不太能吃辣的,所以多用甜辣酱替代的)

4将白糖、鸡精、生抽、醋倒入碗内,加少量水和淀粉兑成味汁待用

5炒锅放入油,烧至五六成热时将码好味的肉丝放入滑至七分熟,盛出备用

6炒锅放入油,(适当多放点)烧至五六成热时将泡子姜滑入锅内翻炒1分钟,盛出备用。(这样做是为了祛除姜的辛辣味)

7肉丝,泡子姜控出油备用

8洗净炒锅放入油,烧至五六成热时放入调好的甜辣酱翻炒
