原料
鸡腿: 2~3只, 青、红小米椒: 适量, 生姜: 适量, 小葱: 适量, 花椒: 一小把, 料酒: 适量, 白胡椒: 适量, 鸡粉: 1小;, 糖: 1小勺, 盐: 少许, 自制藤椒油: 几汤勺
步骤
1准备食材,这里用的鸡大腿,也可以用三黄鸡来做。 瓶子里装的就是藤椒油,我的往期菜谱可以找到制做方法。

2鸡腿冷水入锅,下小葱、花椒、姜片、料酒~

3水开撇清浮沫~

4然后转中火煮5~10分钟关火,焖15分钟

5捞出鸡腿马上放入冰中至凉透

6青红辣椒切圈

13加5、6汤勺煮鸡腿的汤(凉的)

14最后加几勺藤椒油(稍多点),加适量盐搅匀尝尝味道,调至咸淡合适~ (盐不要多了,后期还要腌制入味。)

小技巧
鸡腿不可煮的过久,煮太久就老了,煮后一定要焖一会儿才行,这样做鸡肉会很嫩! 不要尝试用花椒做,差很多。没有鲜藤椒也可以用干的做,但是味差点! 怕辣就少放点小米椒,因为用盐腌过的小米椒辣味会很足,我放的多,过瘾! 藤椒油也可以只做一顿的,油少点、藤椒少点就行!
