1麵粉加水和成稍硬一些的麵糰,醒20分鐘。

3揉啊揉,搓啊搓

4揉到面水濃白,倒在另外一個乾淨的盆里

5再在面盆里加少量水,繼續揉

6繼續揉出白色的面水,再次倒入步驟4的盆里

7柔到麵糰起筋,面水不再發白

8揉好的麵筋

9揉洗好的面水

10揉好的麵筋中加入2g的酵母揉搓醒發至蜂窩狀態

11醒好的麵筋入鍋蒸20分,晾涼切塊備用。

12洗好的面水放冰箱冷藏沉澱(不能低於3個小時),沉澱好後上面一層清水倒掉,留下濃稠的白面水。

13面水如果很稠,可以加適量的清水再攪拌均勻

14麵皮鑼鑼刷一層薄薄的油,取一湯勺面水放入麵皮鑼鑼中

15面鑼放入燒開的蒸鍋中,兩分鐘後麵皮透明鼓起就熟了
