原料
鴨翅: 28隻, 芹菜: 1小把, 胡蘿蔔: 1根, 蔥白: 1根, 蒜瓣: 2頭, 生薑: 1塊, 干辣椒: 10克, 花椒: 10克, 八角: 2個, 香葉: 3片, 肉蔻: 3個, 郫縣豆瓣醬: 1大勺, 生抽: 3勺, 料酒: 4勺, 玉米澱粉: 2勺, 鹽: 1勺, cook100麻辣香鍋調料: 3勺, 雞精: 1勺, 白芝麻: 適量, 香油: 適量
步驟
1鴨翅放在清水中浸泡出血水,再徹底清洗乾淨後撈出瀝干水份備用!

2鴨翅中加入玉米澱粉,料酒,生抽,蒜瓣,鹽,生薑翻拌均勻腌制一晚上!

3芹菜去掉葉子切成段,胡蘿蔔切成片,蔥白切成段備用!

4土豆削皮洗凈切成1cm左右的片,放在水中浸泡!中途換幾次水,去掉土豆里多餘的澱粉!

5浸泡好的土豆撈出徹底瀝干水分,要不然炸的過程中會濺油!

6準備好所需的調料:蒜瓣剝皮稍微拍一下即可,生薑切片,干辣椒切成段,花椒,八角,香葉,郫縣豆瓣醬,肉蔻!

7鍋燒熱倒入適量的油燒至七成熱,放入腌制好的鴨翅,中火慢慢的炸!

9把瀝干水分的土豆片,一片一片的放入鍋中進行炸制!

12放入郫縣豆瓣醬繼續小火炒出紅油!

14加入芹菜,胡蘿蔔和蔥白翻炒至斷生!

小技巧
鴨翅腌制的時候加了鹽,郫縣豆瓣醬和cook100麻辣香鍋調料中都含有鹽分,所以在做這道菜的時候不用再另外加鹽了!鴨翅要提前一晚腌制,這樣才更加入味兒。
