猪排, 面包屑, 鸡蛋, 面粉, 盐, 黑胡椒, 卷心菜, 白芝麻, 葱花, 白砂糖, 清酒, 八丁味噌
步骤
1先炸猪排。猪排一块,面包屑,鸡蛋,面粉。调味用盐和现磨黑胡椒即可

2猪排如带骨则剔去骨头,用擀面杖或刀背砸几下松散肉质,不用砸太薄,保证厚实的口感

3肉边缘的筋络每隔2cm左右切一刀

5在一面撒盐和黑胡椒,略按压

6裹上一层面粉,最好用中/高筋,低筋面粉容易结团不利操作。用刷子刷去多余面粉。提起来抖一抖

7鸡蛋打散,加一勺水混匀,粘了面粉的猪排过蛋液
