低筋面粉: 60g, 黄油: 40g, 盐: 1g, 水: 75g, 鸡蛋: 3个, 淡奶油(馅料): 150g, 糖粉(馅料): 15g
步骤
1将面粉和红曲粉过筛备用,鸡蛋打散备用,黄油、盐、水放入锅中煮开

2煮沸后立刻离火,并倒入面粉先用手动打蛋器搅拌均匀,然后用刮刀翻拌至看不见干粉,这时面粉已经熟化

3加入一半蛋液,用刮刀将面糊切成小块进行翻拌

4经过不停地翻拌后蛋液被面团吸收,呈较顺滑的糊状

5这时提起刮刀面糊呈较干状态,继续加少量液

6直至面糊顺滑提起刮刀呈倒三状态。注意看哟,鸡蛋没有全部加哟,剩下的蛋液就不能再加了!!

7烤箱预热200°C。 把面糊装在裱花袋中,挤在烤盘上,勺子沾水用勺背将小尖角抹平

8入烤箱中层上下火200°C20分钟,然后转180°C20分钟,烤好后不要立即拿出来,继续留5分钟后出炉

9泡芙冷却后将淡奶油加糖粉进行打发至硬性可以裱花状态备用
