面:: , 中粉: 300g, 白糖(助发酵): 3-5g, 水: 180g左右, 酵母: 3g, 酱:: , 麻酱: 120g(多点少点没关系), 花椒: 3g左右, 盐: 5g, 花生油: 10g, 饼皮糊:: , 水: 10g, 酱油: 2g, 面粉: 8g
步骤
1水放微波炉加热三四十秒至手温,加入酵母溶解三四分钟!

2面粉放容器里加糖拌匀,一边加水一边搅拌成面絮,揉成面团,饧五分钟,用搓揉法揉至光滑细腻有劲(或成面絮后放面包机揉面一个程序十五分钟)!饧面30分钟左右!

3饧面的功夫,做酱:花椒放入锅里小火炒至黑褐色,放案板上用擀面杖压成细粉!

4碗里放入麻酱,加入花椒粉、盐,花生油放锅里加热,趁热倒入麻酱里调匀!

5饼皮糊:水倒入碗里,加酱油、面粉拌匀!

6案板上撒薄薄的面扑(面皮多大撒多大面积),饧好的面取出后,不用揉,直接擀成长方形(薄点)!

7用勺子抹上酱(收尾的那边空着点,抹的太满,卷的时候会擀过去弄到外边)!(抹好酱后,可以在上面撒一点点面粉)

8将面皮卷起!(一边抻一边卷)

13按扁成圆形!

14刷上饼皮糊,容器里倒入白芝麻(黑芝麻视觉上会受不了),将刷有饼皮糊的一面粘上芝麻,盖上保鲜膜(保鲜膜上边我会再盖上一块干笼布),饧5~10分钟!

15不粘锅里抹一层油(一点点就好),将饼胚放入,带芝麻的面朝下,小火烙两分钟,将不带芝麻的面抹一点点油,翻面也烙两分钟左右!上色!

16用不粘锅烙的时候,将烤箱预热,上火180度,下火185度,在锅里烙好后,将饼摆到烤盘上,烤10分钟就好了!(中间我翻面调整了一下)
