1低粉100克 高粉50克 黄油30克 盐1克 水70克(看面粉吸水而定,学会预留水) 做法: 1.除了水,把其它材料用手搓至沙粒状 2.再加入水,揉至不见干粉,柔软即可,不用过分搓揉 3.放冷藏静置1小时以上 小贴士:我是上班前做好面团,下班回家做,约冷藏11小时的静置(以室温30度为例) 进行3次三折就可以

2里入黄油50克(我用发酵黄油 做法:取一张油纸,放入50克黄油,借助油纸擀至小方形,入冷藏即可 小贴士:嫌黄油量多,可减15克出来,裹入用35克就行,只是没有那么松酥,不影响入口

3下班回家,先拿出面团室温10~15分钟左右!然后擀至正方形(用粉辅助防粘)
