小技巧
1、做巧虎的耳朵的时候,耳朵的面团可以平铺在烤盘上,这样在做最后发酵的时候,耳朵就不会往掉了。 2、在揉搓巧虎的“王”字和嘴巴的细小长条形时,如果发现面条会回缩,那就再松弛一下再做。 3、不同牌子的面粉,不同的季节,用水量都不一样,在制作的时候,要根据自家的面粉情况做调整。
