草鱼: 一条,约重两斤, 配菜: 随意搭配, 胡椒粉: 适量, 生抽: 适量, 料酒: 适量, 姜: 适量, 蒜: 适量, 小米椒: 七八个, 蛋清: 半个, 生粉: 适量, 干辣椒: 适量, 花椒粒: 多一点, 香菜: 适量, 芝麻油: 适量
步骤
1先分离鱼肉,鱼放在案板上,鱼肚子的一面朝自己,左手如图压住

2右手拿刀从鱼尾处这个点切下去约五毫米深,不要切段骨头

3然后顺着骨头朝鱼头方向切过来

4再从鱼头处那里切段就可以了,鱼肉就和骨头分开了,另一面也是同样的方式分离出来

5鱼肉平铺,鱼皮向下,左手如图轻压住

6右手拿刀斜45角度切下去

7全部切成薄厚适宜的鱼片

8片好的鱼片用适量生抽,料酒,胡椒粉,少许蛋清,一大勺子的生粉,少许的芝麻油,抓匀腌制十几分钟,抓匀后鱼片应该裹上清薄的糊,挂糊了鱼片才不会煮烂,但不能挂的太厚,否则口感会有点泥

9再把鱼骨头斩好备用

10准备配菜,配菜随意搭配,可以火腿片啊,青菜,豆芽,金针菇等等都可以,我就用了一个番茄,黄瓜,金针菇,香菜,加了番茄很特别的,不信试试

11再把姜蒜,小米椒切好备用

12锅烧热放油

17加水,放盐,豆瓣酱很咸,所以这里一定要控制好盐量

18放生抽适量

19待汤烧开以后先把鱼骨头放进去盖上锅盖煮几分钟,

20打开锅盖再把配菜丢进去煮熟,不要煮的太死了哦

21配菜一熟就把鱼骨头和配菜先捞起来放进碗底

22锅里只剩下汤汁,这时候把鱼片倒进去,并用筷子快速轻轻滑散开,动作幅度不要太大,然后盖盖子煮开,一分钟就熟了,关火

23全部装进碗里之后,鱼上面放入切好的干辣椒段,锅里一边烧热油,稍微烫一点
