成餅痴了我最近。。。哈哈 豬肉餡里加進去豆腐出來的肉餅,因為豆腐的關係口感特別贊! 不複雜,炸肉圓比較費油。做肉餅用油就少很多了哈 因為加了豆腐,做肉餅的餡兒會比較濕,煎的時候油濺的厲害,注意別燙到 做好的肉餅,可直接噴少許料酒煮下或者加醬油紅燒,看你喜歡哈 肉餅我做的小小個的
原料
豬肉 (帶點肥肉,剁餡), 蔥, 姜, 老豆腐, 生抽, 鹽, 白糖, 料酒
步驟
1蔥洗凈切蔥花,姜切薑末

2豆腐跟豬肉比例1:3

18表面可以有點微焦,取出

小技巧
1、豆腐老豆腐跟嫩豆腐應該都可以,我用的是老豆腐,豆腐跟肉1:3 2、因為加里豆腐,所以餡兒比較有水分,所以其他蔥啊,肉餡儘量控水 3、生抽不用太多哈,增加鮮味,白糖一點點就行了,也是為了提味兒 4、煎的時候注意,水分多,油濺的厲害,可以蓋上鍋蓋,別燙到哈 5、一面煎好成型,等你用筷子推肉餅可以很容易的在鍋里滑動再翻面 要耐心點,別急著翻面,這個餡兒很軟濕,別翻面給散了。
