原料
刀魚(帶魚), 長茄子, 醬油, 蚝油, 白糖, 鹽, 姜, 蔥, 蒜, 香菜, 水澱粉, 料酒, 胡椒粉, 小辣椒碎
步驟
1刀魚治凈切段,加料酒、鹽腌制5—10分鐘

2長茄洗凈去蒂,手撕成條,加鹽稍鹵一下

3用油煎軟、盛出備用

4鍋內續油,八成熱後下入魚段,煎成兩面金黃(魚入鍋前用廚紙拭凈水份,防止油濺出)

5下入蔥姜蒜碎、醬油

6加入茄子稍加炒制(別把魚弄碎了)後,加蚝油、白糖、料酒炒勻

7加入適量水,中火燒開後關中小火燒制10分鐘左右,加鹽、胡椒粉調味後,淋水澱粉勾成勻芡,撒香菜碎和辣椒碎即可
