綠豆蓉 500g, 淡奶油 120ML, 糖 4大勺, 色拉油 2勺, 低筋麵粉 200克,油皮, 高筋麵粉 50克,油皮, 低筋麵粉 220克,油酥, 無水酥油 110克,油酥, 細砂糖 2大勺,油皮, 無水酥油 50克,油皮, 水 125克,油皮
步驟
1500g綠豆蓉濾干水分倒入炒鍋中,最小火,加入4大勺糖,2勺色拉油,用鏟子拌勻

2用鏟子儘量將綠豆壓碎,並不時翻炒,避免糊底

3倒入120ML淡奶油,用鏟子拌勻

4不停翻拌至水分收干,餡料變得濃稠可以團成泥狀的大塊,這樣綠豆餡就做好了,放涼備用

5油皮:粉類混合均勻,再拌入剩餘材料,揉成均勻的麵糰,蓋上保鮮膜,醒一會兒
6油酥:混合均勻成團即可.備用
7取一個油皮擀成圓形

8放一個油酥在中間

13然後將所有卷好的酥皮重複先前的工序,再一次擀長捲起

14取一個卷好的酥皮,將麵皮豎放,用手掌輕輕壓扁

18烤盤刷油,將餅壞整齊的碼放在盤內

19烤箱預熱190度,置於烤箱中層,上下火,烤制30分鐘,約15分鐘時麵皮即會上色,如果不想烤糊可蓋上錫紙,或者取出翻面再烤15分鐘
