步驟
1把薑切成片,蔥切成段

2把洋蔥切成適中大小,去除酸梅的頂,輕輕壓成蓉

3把鴨洗淨切件,用老抽均勻地塗滿鴨件

4把油加進大鍋內,煎鴨件至鴨皮呈金黃色,放在一旁備用

5同一隻鍋, 加少許油,炒香蒜頭、薑片及蔥段,然後加入洋蔥煮至呈金黃色

6加入紹興酒、磨豉醬及酸梅蓉拌勻,鴨件回鍋再加入水及冰糖,煮沸後將火調至中火,蓋上鍋蓋煮30-45分鐘至醬汁濃稠,鴨件熟透
