原料
抹茶粉: 10g, 細砂糖: 30g, 熱水: 100g, 朗姆酒或者白蘭地: 5g, 蛋黃: 2個, 細砂糖: 30g, 原味酸奶: 50g, 馬斯卡彭奶酪: 200g, 淡奶油: 100g, 蛋清: 2個, 細砂糖: 30g, 手指餅乾: 18根左右, 抹茶粉(撒表面): 適量
步驟
1先來做抹茶糖漿,碗中放入抹茶粉

2加入細砂糖

3然後分次倒入熱水,目的是為了溶解抹茶粉與細砂糖,並且打散抹茶粉的結塊,所以熱水不能一次性加太多

4先加入少量,攪拌

5再緩慢加入剩餘的使抹茶粉與細砂糖充分溶解,攪勻,然後放溫

6在溫熱的抹茶溶液中倒入朗姆酒或者白蘭地,抹茶糖漿就做好了,放入冰箱中冷藏備用

7接著分離蛋黃與蛋清

8蛋黃中加入細砂糖

9用打蛋器打發至細砂糖溶解,蛋液顏色變淺泛白

10加入原味酸奶,我用的是自製酸奶,有一點凝固,不是很稀的那種

11攪拌均勻

12然後加入馬斯卡彭奶酪

13用打蛋器充分攪拌均勻至無顆粒

14將淡奶油打發至六分發

15加入到奶酪糊中

16繼續攪拌均勻

17然後打發蛋清,蛋清中加入細砂糖

18打發至剛好能拉出大彎鉤的濕性發泡

19分次將奶酪糊加入到蛋白霜中翻拌均勻

20這是第二次加入

22這是最後徹底翻拌均勻的狀態

23接下來開始裝盒 擺放三塊手指餅乾

24取出冷藏好的抹茶糖漿,刷滿刷透

25然後鋪一層奶酪糊蓋住手指餅乾

26然後再重複鋪手指餅乾,刷滿抹茶糖漿(這一步忘記拍了) 擺好手指餅乾後,再鋪上奶酪糊,抹平,放入冰箱冷藏
