泥鰍: 一斤, 黃豆: 二兩, 酸筍: 2兩, 辣椒,青蔥: 少許, 蚝油: 適量, 料酒,鹽,糖: 適量
步驟
1食材圖:新鮮泥鰍(小魚也行)一斤~

2黃豆2兩~

3先用清水泡2兩黃豆(半天時間)然後滴干水份~

4放一飯碗油炸至金黃色後撈起瀝干備用 1

5緊接著炸泥鰍至酥黃(留點底油)~

6酸筍(酸菜,酸豆角,泡菜都可以)切絲,小米辣和香蔥切段~

7然後熱鍋和干辣椒姜蒜末一起炒香,再放入炸好的泥鰍,加入一茶匙鹽,兩茶匙糖,料酒兩茶匙,蚝油一茶匙煸炒一分半鐘,再加入黃豆,半碗澱粉水,小火燜兩分鐘撒香蔥段後就可以起碟~
