步驟
1干豇豆泡軟切碎,五花肉切小丁

2五花肉丁中加入鹽、白鬍椒粉、醋、料酒、生抽入底味,腌制一會兒

7加入水,水量要沒過干豇豆還要多一點,水燒開後加入八角、冰糖和香葉,如果有浮沫記得撈去

8加蓋繼續煮35分鐘左右,根據個人口味添加鹽,大火收一下汁即可出鍋

9酵母溶於水後加入麵粉和細砂糖,用筷子攪成絮狀繼而揉成光滑的麵糰

10蓋上保鮮膜發酵到2倍大,用手指輕輕戳麵糰,麵糰無明顯塌陷和回縮就是發好了

11將發酵好的麵糰取出揉光滑,分成大小合適的小劑子,依次擀成中間厚四周薄的包子皮

12包入冷卻後的餡

13捏褶子,依次包完所有包子,擺入蒸籠,鬆弛15分鐘左右(冬季要延長時間),可以看到包子胚明顯變大,冷水上鍋,中火,水開後蒸15分鐘即可,燜3分鐘再出鍋
