原料
糯米粉或麵粉: 適量, 雞蛋: 2個, 鹽: 適量, 水: 適量, 蝦油: 適量, 茶籽油: 適量, 艾草: 50g, 食用鹼: 少許
步驟
1取艾草嫩葉部分清洗乾淨,放入沸水鍋內煮,加少許食用鹼煮至軟爛

2撈出馬上投入冷水盆內冷卻,用手取出艾草擠干水分,重複三遍

3艾草用刀切碎

4取一較深的碗,放入艾草,雞蛋和蝦油用筷子拌勻

5加入適量的糯米粉(我這次加的是麵粉)

6絞拌成稀糊狀,一定要稀一點煎的餅更嫩,才好吃

7鍋內放入食用油,等油稍為有點熱再倒入事先拌好的艾草麵糊,中火煎到定型後翻一面煎
