步驟
1雞改刀成小塊,用開水焯一下

2將豬腿肉肥瘦分開,瘦肉剁碎,肥肉切成石榴粒

3一部份蔥姜拍碎或打結,一部份切成沫.

4鍋內下油,煸炒雞塊,依次下料酒,醬油,糖,蔥姜,放水沒過雞塊,燒開後改小火燉

5在剁好的肉沫里分次加入適量的水,然後放入雞蛋,澱粉(儘量少),雞精,鹽,調和油,蔥姜沫,依一個方向攪拌上勁

6手上沾水,將肉沫用兩手不斷摔打成如圖大小的肉圓

7另取一鍋,放入一斤左右的油,等油溫上來後,調小火,將肉圓依次放入炸成金黃色

8將炸好的肉圓放入在正燒著雞的另一口鍋內同燉,約一個小時即可

9在盤中墊上青菜葉,裝入燒好的肉圓,上桌吧
