麵粉: 250g, 清水: 150g, 肉餡: 200g, 韭菜: 150g, 雞蛋: 2個, 精鹽: 1.5鹽勺, 雞精: 1.5鹽勺, 十三香: 1鹽勺, 油: 適量
步驟
1準備材料~

2將麵粉倒入盆中,一點點加入清水攪成絮狀,和成麵糰,蓋保鮮膜醒面20分鐘~

3韭菜洗凈控水,切末裝大盆~ 肉餡炒8分熟,顏色變白盛出裝盤晾涼~ 雞蛋打散,炒小塊炒熟備用~ 韭菜盆內倒適量油拌勻(這樣韭菜不容易出水)再放入肉餡,雞蛋碎,加入精鹽,雞精,十三香,攪拌均勻,靜置20分鐘~

4拿出麵糰多揉一會,揉成長條狀,分成均勻的大劑子,擀成大薄餅皮~

5將肉餡平鋪在餅皮上,留些邊緣~ 餅皮從一側折起蓋上肉餡(如圖)~ 另一邊也對摺覆蓋上餅皮~ 將兩邊角壓實~

6依次多做幾個~

7電餅鐺內刷適量油,擺入長餅(用鍋烙的,全程小火)~

8烙至底面金黃翻面~
