蕎麥粉: 30g,E, 低筋麵粉: 80g,E, 白豆沙餡: 520g,餡料, 紅豆沙餡: 520g,餡料, 蛋黃: 15g,A, 蛋白: 25g,A, 綿白糖: 33g,A, 奶油: 17g,B, 麥芽糖: 2g,C, 煉乳: 47g,C, 小蘇打: 1.3g,D, 水: 2.5g,D
步驟
1先將A放在容器中,隔水加熱至糖化

2離開熱水,加入B攪拌均勻

3再加入C拌勻

4將D混合拌溶解,倒入3中,攪拌均勻

5將過篩後的E加入4中,拌勻成麵糰狀

6將5鬆弛10分鐘後,再分割成30g一個,備用

7將白豆沙餡和紅豆沙餡分別分割成65g一個

8再用白豆沙餡包住紅豆沙餡,將接口收緊

9將8放在模具中,接口朝上,然後壓緊,脫模,擺入烤盤
