原料
花膠: 2隻, 豬肉: 100g, 薑片: 4片(2片飛水,2片燉湯), 紅棗: 3顆, 枸杞: 12粒, 黃酒: 1滴(飛水用,辟腥), 鹽: 適量, 水: 2碗半
步驟
1因為我是一人用,所以就選了兩個花膠,清洗乾淨花膠後,睡覺前放進涼水中浸泡8-9小時左右,具體應視花膠厚度

2浸泡後,捏一下,軟了即可撈起來

3準備輔料,紅棗、枸杞、薑片,紅棗去核,清洗乾淨後放入燉盅

4辟腥,把花膠切開,用清水再沖洗一次,然後飛水,把薑片放入燒開的水裡,然後熄火,把花膠再放進熱水中,再滴一滴黃酒。放在熱水裡約10分鐘撈起。

5過冷河,把花膠從熱水中撈起來,放入清水中

6豬肉也最好飛一下水,辟一下重的豬氣味道
7把花膠和瘦肉都放進燉盅里

8加入2碗半的水

9燉兩個小時左右
