这次做的功课比较足,参考了台湾牛扎糖的制作方法,另外小狐狸君君那儿也有详细的做法。加上自己的理解和体会做出了约一斤半的牛扎糖。
原料
白糖 110克, 麦芽糠 220克, 熟花生 250克, 杏仁 80克, 水 40克, 盐 1.5克, 蛋白 一个约35克, 无糖奶粉 约100克
步骤
1白糖加入麦芽糖和水先煮开

2再倒入盐,混合均匀

4奶粉称好备用

5熟花生放入烤箱100度预热。杏仁也可以一起放入。花生我是整粒全部分半

6黄油切小块室温下软化,手一按能一个洞

7烤箱提前铺上硅油纸,注意不是油纸

8烧半锅滚开的热水盖盖备用

9蛋白打至硬性发泡

10糖浆煮至135-140度,这个比较热,小心

11然后将煮好的糖浆倒入蛋白中,一边倒,一边搅拌

12搅拌均匀

13黄油分次加入糖浆中

14分次加比较容易。刚才8步的热水放在糖浆下面

15黄油搅拌均匀,没有颗粒

16奶粉也倒入糖浆中

17混合均匀后,倒入预热的花生米,也混合均匀

18再倒入杏仁,杏仁的量看糖浆来定。我喜欢果仁多多的糖

19搅拌均匀

20倒入模具中,模具中提前铺好硅油纸

21再在上面放一张硅油纸,用擀面棍擀压平,放凉

22放凉后,去掉硅油纸
