原料
黄油: 125克, 低筋面粉: 175克, 细砂糖: 80克, 朗姆酒(可选): 50毫升, 玫瑰花果酱: 25克, 鸡蛋: 3个, 蔓越梅干: 60克, 泡打粉: 5克, 杏仁片(可选): 少许
步骤
1蔓越梅干用朗姆酒泡着,备用;(没有朗姆酒,用水也可以)

2黄油切小块,软化至手指压下去很软即可;

3把砂糖分3次,加入黄油中,搅拌至膨大的感觉;

4搅拌完是很顺滑的糊;

5将打散的鸡蛋液,分6次,加入黄油糊中搅拌,直至完全混合(千万别贪心,倒多了会水油分离);

6蛋液全部搅拌完,糊又开始变得更厚实;

7低筋面粉和泡打粉过筛,入糊中;

9加入朗姆酒浸泡的蔓越梅干;

10加入玫瑰糖浆,然后进行搅拌(这个时候糊比较难拌,可以用筷子);

11糊调好后,倒入模具,提起模具顺时针旋转并震一震蛋糕,把空气排出;

12烤箱预热180度,中层,烤10分钟后皮就凝结了,这时拿出来用刀轻轻的划个“十”字,然后撒上杏仁片,继续回烤箱;

13继续回烤箱,180度,30分钟,即可。
