步骤
1准备食材,并清洗。

2制作前从冰箱中拿出牛排,在常温下放至解冻,使牛排内部达到室温温度;再用吸水纸吸取表面血水,请勿用水冲洗牛排;

3牛排煎锅先用大火预热5分钟,加热至滚烫,直至青烟冒出,无需放油;

4此时,准备好盛牛排的盘子,放入160度的烤箱内加热;

5接下来,用夹子把牛排直立夹住,先快速把牛排周围煎一圈,锁住牛排的肉汁;

6转中火,把牛排平放,A面先煎1分钟,旋转45度,再煎1分钟,煎出十字焦纹,煎的同时可抹上黄油、撒上黑胡椒及少许盐;

7翻B面,先煎1分钟,旋转45度,再煎1分钟,同样撒上黑胡椒或少许盐;

8取出烤箱内的盘子接住煎好的牛排;

9此时利用锅内残留的油汁,把蔬菜之类的放入同时煎,同样撒入适量黑胡椒或盐,盛出摆盘即可享用(无需额外的酱汁,过多的酱汁会剥夺牛排本身的滋味,反而不美);
