原料
鸡蛋: 1只, 猪肉馅: 300g, 葱: 一根, 盐: 2克, 茄子: 2个, 面粉: 适量, 淀粉: 适量, 泡打粉: 1克, 胡椒粉: 1克, 料酒: 1汤匙
步骤
1把肉馅剁好,放葱花,料酒,盐,胡椒粉后搅拌均匀

2切茄子,尽量选择粗点的茄子,大概一片5毫米厚度,一刀不切到底,另一刀切到底

3调面糊,面粉和淀粉比例3:1,打一个鸡蛋,把蛋黄放面糊里,蛋清免得浪费直接放进肉馅里,加些水,调成糊状

4接着便是把肉夹到茄子里,藕可以用相似做法,就是藕盒

5把油烧到7成热,转小火,茄盒外裹上面糊,下油锅炸至金黄色,最后用吸油纸吸干多余的油
