麵粉 500克, 雞蛋 1個, 鹽 1小撮, 水 250毫升, 豬肉末 500克, 東北酸菜 300克, 雞蛋 3隻, 蔥姜, 鹽, 料酒, 醬油, 糖, 胡椒粉, 高湯, 植物油

1麵粉、雞蛋、鹽放入盆里

6雞蛋炒好切碎,東北酸菜浸泡半小時洗凈切碎,稍稍捏干,蔥姜切末

7將薑末、鹽、料酒、醬油、糖、胡椒粉放入肉末中,順一個方向攪拌

8中間分次加入適量雞湯或其它高湯,用力攪拌到肉上勁

9然後放入雞蛋末、酸菜末、蔥花、植物油拌勻

10取出醒好的麵糰,再次揉勻,搓成條狀,切成小劑子

12將餡料放入餃子皮中央

13捏緊餃子皮邊緣包成餃子狀(請再次忽略那些摸樣醜陋的餃子,姑且就稱它為餃子好了)

14鍋里加入足量清水,大火燒開後,逐個下入餃子,用勺子輕輕推動,防止粘鍋底

15水開後倒入少許冷水再燒開,再倒入一次冷水燒開
